Potato Burritos
Ingredients
2 cups hash brown
1 t. (teaspoon) onion powder
4 cups chicken
2 eggs
2 T. (tablespoon) milk
½ t. (teaspoon) Worcestershire sauce
1/8 t. (teaspoon) salt
1/8 t. (teaspoon) pepper
1 cup shredded cheddar cheese or mozzarella cheese
3-4 tortillas
Directions
In a skillet cook the chicken on medium heat
In the same skillet brown the hashbrowns
Add the onion powder
In a small bowl, beat the eggs, add milk, Worcestershire sauce, salt and pepper
Pour the egg mixture over the hashbrowns; cook until the eggs are set
Stir the chicken into the eggs
Add grated cheddar or mozzarella cheese
Spoon the egg mixture onto each tortilla and fold in the sides of the tortilla
Put them on a plate in the microwave for 45 seconds
Serve with salsa and or sour cream
