Muffins
Ingredients:
500 ml all purpose flour
65 ml sugar
15 ml baking powder
1 ml salt
1 egg, well beaten
5 ml vanilla
250 ml milk
65 ml vegetable oil
Method:
Preheat oven to 400°F (200°C)
Line a muffin tin with 12 paper baking cups. Set aside.
In a medium bowl, sift the first four ingredients. Set aside.
Choose from the list below a type of muffin desired. Prepare accordingly.
Make a well in the dry ingredients. Pour all liquid ingredients in and stir until just moistened. Batter will be lumpy.
Spoon batter into prepared muffin cups filling 2/3 full. Wipe off any batter on the pan before baking
Bake for 25 minutes or until golden brown.
Remove immediately from pan. Serve warm.
