Calzone
Ingredients:
Dough:
1 pkg. (package) Quick-acting yeast
1 T. (tablespoon) sugar
2 T. (tablespoon) oil
1 t. (teaspoon) salt
3 - 3 ¼ cup flour
Note: Make the dough first and then make the spinach and chicken mixture)
Calzone Dough Method:
Dissolve 1 package of quick-acting dry yeast in warm water in a large bowl.
Stir in sugar, oil, salt, and 1 cup flour.
Beat until smooth with a spoon. Mix in more flour about 2 – 2 ¼ cups, enough flour to make dough easy to handle.
Knead dough on a lightly floured surface for about 5 minutes. (Until dough is smooth and elastic).
Place the dough in a bowl and cover with a tea towel for about 5 minutes to let the dough rest. (Make the inside mixture while the dough rests).
Spinach and chicken mixture
Ingredients:
1 ½ cups of mozzarella cheese
¼ cup parmesan cheese
2 cooked chicken breasts, cut into bite sized pieces
2 cups cooked frozen spinach
1 can cream of mushroom soup or 1 cup of Alfredo sauce
1 T. (tablespoon) oil
1 T. (tablespoon) minced garlic
1 green onion, chopped
4-6 sliced mushrooms (optional)
Instructions:
Preheat the oven to “Bake” 450°F (232°C)
Place the frozen spinach on top of some paper towel on a microwave safe plate. Cook in the microwave for 6 minutes.
While the spinach is cooking, cut the chicken into bite sized pieces.
Add 1 Tablespoon of minced garlic and the chopped green onion.
Put 1 Tablespoon of oil in a skillet. Heat up the skillet.
Add the chicken to the garlic/onion mixture and cook until no pink is showing.
Add the sliced mushrooms and continue stir-frying the mixture until the mushrooms are cooked.
Add 1 can of cream of mushroom soup or alfredo sauce and ½ cup of water
Heat thoroughly.
Divide the dough into six equal pieces. Pat each piece into a circle.
On half of each circle layer mozzarella cheese, chicken mixture, and parmesan cheese.
Fold dough over filling; press edge with fork to seal and bake for 15-20 minutes.
